In our second season of ‘Saints’, we wanted to remain faithful to our belief that a good blend has no more than 2 constituent components. The quest for a worthy sequel presented us with a bean which was, unusually, strong across all processing methods - washed, natural, and honey. Each process enriched the cup without confusing it. Supplied by 210 small farm holders of the Community Tarrazu Cooperative in Costa Rica, this 3 way processed lot coupled beautifully with a new crop AA from the Iyego Co-operative society in Kenya. Our collective palate journeyed through notations of lovely light acidity of blackberries, blackcurrants, apples and oranges, to deeper comforting notes of nuts, creamy butterscotch and biscuit.
