This is a special one! We’re excited to bring you Yabitu, a honey-processed coffee from Ethiopia. Our green coffee supplier, Nordic Approach, has been working with coffee farmer Asnake for many years now. His attention to detail and processing skills bring forward the true flavours and potential of Ethiopian coffees. We’re thrilled that we get to partner with Asnake as he continues with his experimental lots. Hailing from a town in Uraga, a well known part of the Guji region of Ethiopia, Yabitu follows many coffees from this area that have consistently delivered expressive and flavour intensive profiles.
This lot of coffee is unique, as it has been processed with the addition of spices. Once the cherries have been pulped into the fermentation tanks, cardamom is added along with the removed cherries from the pulping process. This is all allowed to ferment for 72 hours, and then on dried raised beds. This processing technique impacts the flavour of the coffee in such interesting ways. On the cupping table, we tasted intense notes of cardamom, tangerine, with a caramel sweetness at the top.
