The high elevation and cool climate slow cherry maturation, giving the coffee plenty of time to develop its sugars and characteristic clarity.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"isSelectedEnd\"\u003e\u003cspan\u003eFarmers grow predominantly traditional SL varieties, with cherries hand-picked at peak ripeness and carefully sorted before processing.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"isSelectedEnd\"\u003e\u003cspan\u003eOnce delivered to the station, cherries are floated and pulped in the evening, before undergoing an initial 20-hour dry fermentation.
