La Claudinota #4, Colombia (170g)

Following in the footsteps of El Encanto and Villa Clabellina this year, La Claudinota is another from our friend Juan Saldariagga. Simon chose this coffee from Juan’s smaller and original farm at the start of its harvest last December. He was impressed with the consistency of the cherries being harvested and Caesar, the farm manager, was extremely conscientious in his approach to processing the coffees.

The cherries are harvested by around 45 seasonal pickers and after traditional fermentation, are laid out in the Marquinisa, which is a roofed greenhouse-like facility with raised beds. Juan has largely been experimenting with Tabi varieties here and drying time is usually 10-20 days.

Expect plenty of funk in the cup, with an underlying winey flavour, bound to appeal to the natural wine enthusiasts.
